This time bring Idli with Punjabi tadka . I hope you will like it.
It is an instant recipe and most loved by my family and weekend special too. No cooking no hassle too. Idli is the lightest and yummiest dish and mostly we all love it. Stuffing in Idli is somewhat like aloo k paratha pure Punjabi breakfast recipe. the combo of both come out great. Don’t you believe it then try out yourself

- 1 cup semolina
- 1 tbsp oil
- 1 cup curd or yogurt
- salt to taste
- 1 Eno sachet ( you can take ½ tsp baking soda in place of Eno)
- water as required
for potato stuffing
- 2 medium potatoes – boiled
- 2 green chillies, finely chopped
- ½ tsp turmeric powder
- 1/2 tsp red chilli powder
- pinch of mango powder(optional0
- crushed and roasted peanuts 1 tbsp(optional)
- few coriander leaves, finely chopped
- ½ tsp jeera / cumin seeds powder
- 1 tsp chaat masala
- salt to taste
potato stuffing steps:
- boil the potatoes and keep it aside.
- add all masala- salt,chaat masala,red chilli,mango powder,turmeric powder,jeera powder into it .
- add roasted and crushed peanuts into it.
- add chopped coriander leaves and green chilli to it and mix properly.
- make small balls out of the mixture and flatten them as a patties and keep aside.
Instant Idli batter steps:
- in a large bowl, add 1 cup of semolina.
- add 1 tbsp of oil into semolina by adding oil to it. Idli will not be sticky anymore.
- add 1 cup of curd or yogurt. it is best to use slightly sour curd.
- beat the curd so no lumps remaining mix 1/2 cup water if required. mix well
- add salt into the wet batter.
- now in semolina add wet ingredients. bring the batter to idli batter consistency. if required add water.
- add 1 sachet of Eno and give a stir. you can now see the batter turning slightly frothy. do not mix more.
- grease the idli plates
- pour 1 tbsp of idli batter into each idli stand,, do not full it till top as we have to add stuffing too
- place the flattened potato stuffing
- gently press the aloo stuffing.
- pour again 1 tbsp idli batter to cover the filling.
- stack up all the idli plates and steam for 6 mins.
- unmould the idli plate and serve hot with chutney or sambar
for potato stuffing, you can even add grated carrots and boil green peas, capsicum. make stuffing as you like it
the instant stuffed Idli batter consistency is very important. It should not be too thick nor too runny.
- stuffing should be thick and small-sized so that it doesn’t come out of Idlis. the real charm is of stuffing.
